The Global COVID-19 Pandemic
2020
Chef Tom left Vermilion in early 2020 with the intention of opening a restaurant, and then the pandemic hit. We had to think a little differently about how to start a business during a global pandemic. A friend casually mentioned to Chef Tom that he should open a food truck instead and that sent us down the rabbit hole of what was possible.

Picked up the trailer
December 31, 2020
After months of planning and preparation, we picked up the trailer on New Year’s Eve! A very exciting way to end a year filled with so much uncertainty.

Opened for business
February 1, 2021
On a cold, dark and snowy winter’s night in Del Ray, we opened our trailer window for business for the first time. We operated from our temporary location at 2016 Mount Vernon Ave. (in the parking lot behind the old Bon Vivant Cafe) for the month of February. We may have been right next to a dumpster, but we were up and running!

Moved to 106 Hume Ave.
March 1, 2021
We leased the parking lot and old Nectar cafe space at 106 Hume Ave. and moved the trailer to its current location. Although there wasn’t a full kitchen inside, we were able to move several large pieces of equipment out of the trailer and finally had room to grow.

Keeping up with the doughmand
Winter-Spring 2021
In the early days, Chef Tom single-handedly made every pizza, appetizer and dessert that left the trailer. We would sell out quickly through online pre-orders, but our new location at 106 Hume Ave. gave us the room we needed to expand our production.

Building our team
May 2021
Team work makes the dream work! We hired our Sous Chef, Johnny Mohl (a.k.a. Johnny Dough Hands) followed shortly thereafter by our Assistant General Manager, Chad Creason (a.k.a. The Spicy Chad). They both hit the ground running and have been integral to the growth of Stracci Pizza.

Opened outdoor seating
June 15, 2021
We opened our patio and parking lot picnic area for outdoor seating. Nothing beats a hot 'za straight from the oven!

Opened our bar inside
June 25, 2021
We got our liquor license and added a curated selection of craft beers, Italian wines, and classic cocktails to our menu.

Added walk-up availability

You can now walk up to the trailer to order or give us a call to place your order over the phone.

Opened our dining room
October 2021
After months of planning and preparation, we opened our dining room for indoor seating — a major milestone on our journey!

We’ve come a long way in less than a year, but we're still just getting started.
Thank you to all our customers who have been with us from the beginning when we were just a trailer selling pizzas in a cold, dark parking lot next to a dumpster.
